Ingredients

Using an air fryer is a great way to cook this fatty cut of pork. The air fryer basket is useful since it holds up the meat while letting the grease drip down below. This helps the pork belly crisp up and not be soggy.

  • Pork belly - This is a cut of meat from the belly of the pig. I find my pork belly at Costco. But you can try the meat market at your local grocery store. If you can't find it at the supermarket a local butcher should have it on hand as well. It will be more expensive than regular bacon but worth it!
  • Sugar-free maple syrup - The syrup is optional but I recommend you try it at least once. This gives each bite that balance of sweet and salty goodness. You can use my homemade keto pancake syrup.
  • Salt & BlackPepper - Pork belly does not have added salt the way bacon does. You will need to add some kosher salt or sea salt and pepper for the best flavor.

How To Make Air Fryer Pork Belly

This is a very easy way to make pork belly compared to traditional methods.

Step One: Slice the pork belly so that it fits in the air fryer basket without having to be bent. This may depend on the size of your air fryer. I have an Instant Pot with an air fryer lid.

Top Tip💡

Make sure to grease the air fryer rack or basket that you're using so that the pork belly slices don't stick for the best results.

Step Two: Air fry the pork belly pieces in a single layer in the air fryer for up to 30 minutes cooking time. The internal temperature will be safe to eat much before 30 minutes. But if you want crispy pork belly just keep cooking until it's as crisp as you like.

Step Three: Once done, remove the pieces of pork belly and drain on a paper towel. They won't release much grease but will release a little.

Variations

Syrup - There really isn't a ton of variety that you can do with this pork belly but you can change up the syrup flavoring or even try a bit of honey instead if you aren't keto.

Brown Sugar - Brown sugar or a brown sweetener added during the last 5 minutes is delicious. You can have a bowl of it next to the air fryer and coat each piece and then add it back for that to glaze on.

Asian - Mix brown sugar sweetener with soy sauce and cook until it reduces by half. Use as a glaze.

Seasoning - If you want to season your pork belly before cooking it, do so! Just mix up a blend in a small bowl, add on your favorite seasonings, and cook for the time on the directions. Onion powder and garlic powder are natural choices as well as smoked paprika and chili powder.

Barbecue Sauce - This is also delicious dipped in some keto bbq sauce.

Bites - Want crispy air fryer pork belly bites instead of strips? Just cut the strips into bite-sized cubes with a sharp knife before cooking. Pork belly cubes are my kids' fave!

How do you know when pork belly is fully cooked? ›

The pork will be ready when the juices run clear and the flesh is tender when pierced with a knife. If the skin hasn't crisped up, try putting the joint under a hot grill for a few minutes – but remember to keep an eye on it to avoid burning.

What is the best temp to cook pork belly? ›

Slow roast 1 1/2 hours – Roast the pork in a 140°C/285°F oven (120°C fan) for a total of 2 1/2 hours. Keeping the temperature this low allows the meat to become tender, for the fat to render (melt) so we get the “confit” cooking effect, and also to dry out the pork skin yet keep it supple.

Should you put oil on pork for crackling? ›

Air fryers work by circulating hot air, which originates at the bottom of the fryer. Lining it with foil can constrict the air flow and your food won't cook properly. Can you put raw pork in an air fryer? ›

It is safe to cook raw meat in the air fryer if it is fully defrosted, seasoned, and monitored. Some fully cooked foods, including chicken tenders or fries, can be placed frozen in the air fryer. However, with raw meat, it's recommended to thoroughly defrost to allow more even cooking and a tasty final product.

Can you put tin foil in air fryer? ›

Foil is safe to use in an air fryer so long as you follow three basic rules: never let foil touch the heating element; make sure the foil is weighted so it doesn't blow around the basket; and avoid contact with acidic ingredients, which can cause the foil to leach onto your food.

Do you put salt or oil first for pork crackle? ›

Cut it away from the meat and place it on a baking tray lined with foil, then brush with oil and sprinkle with salt. Cook under a preheated grill until the magic happens.

How do you keep pork from drying out in an air fryer? ›

Using oil

Using oil in an air fryer is perfectly fine and helps the meat to remain moist and come out looking golden brown. However, a little oil in an air fryer does go a long way. With most cuts of pork, simply rubbing some oil into the meat will be all you need. You can use either regular olive oil or a spray oil.

What is the best oil for pork crackling? ›

Why are my pork belly slices tough? ›

A: The pork belly may be tough if the slices are cut too thick, resulting in insufficient cooking time to tenderize the meat. Alternatively, the pork may have been overcooked, causing it to become tough.

What temp should pork slices be? ›

Cook all raw pork steaks, chops, and roasts to a minimum internal temperature of 145°F (62.8 °C) as measured with a food thermometer before removing meat from the heat source. For safety and quality, allow meat to rest for at least three minutes before carving or consuming.
