Of all of the Christmas flavors – hazelnut, peppermint, red velvet – gingerbread is my favorite. It’s got a sweet and spicy flavor that can’t be beat. Our family finds so many excuses to enjoy the flavor all day long. Gingerbread Cheesecake Dip is our go-to snack and this is our annual Christmas breakfast after opening the gifts.

The best part? You can make this batter ahead of time and just put it into your waffle make in the morning. So prep the batter the night before and enjoy as a quicker breakfast the next morning.

Homemade waffles taste so much better than store-bought mix. It’s just mixing together wet and dry ingredients, just like any baking recipe. In the end, you get a great fluffy waffle that has a crisp exterior (depending on how long you bake them in your waffle iron). We’ve made these in a classic Belgian Waffle Maker AND our Mickey Waffle Maker.

What To Serve With Your Gingerbread Waffles

Of course you’re going to need some maple syrup. These waffles look amazing with some powdered sugar dusted on top too. It’s a great finishing option and really brings out the golden color of the waffle. If you’re making a true brunch, add some breakfast meats to complete the meal – sausage, bacon or ham. I love a fresh pot of coffee as well. It’s just warm and comforting with your waffles.

Tips To Making The Perfect Christmas Homemade Waffles Every Time

  • Read the instructions of your waffle maker, because every one has a different cooking time!
  • Separate the egg whites from the egg yolks (like in this Gingerbread Waffles recipe).
  • Use non-stick cooking spray on the tops and bottoms of the waffle maker.
  • Don’t lift the lid and peak too early.
  • Measure the same amount of batter for every waffle to create consistency.

How To Make This Christmas Gingerbread Waffles Recipe

In a large bowl, combine the first seven ingredients – the dry ingredients.

In a small bowl, beat the brown sugar and egg yolk until fluffy.

Add the buttermilk, molasses and butter. Stir into dry ingredients just until combined.

Quickly spoon onto a preheated waffle iron that’s been sprayed with non-stick cooking spray. Bake until golden brown on both sides. Sprinkle with confectioner’s sugar, if desired.
